Convert text in either direction at character or phrase level. The Taiwan-with-phrases mode also handles regional vocabulary differences (e.g. 軟體 ↔ 软件, 程式 ↔ 程序), so you get idiomatic output rather than a one-to-one character swap. Hong Kong mode uses the HK-specific traditional character set; Japanese mode targets Shinjitai (modern simplified Japanese kanji).
